Irish Griddle Bread

Make bread in just 10 minutes. In this Irish Griddle Bread recipe you can also add half a cup of raisins for a more sweet version. Irish griddle bread is not quite as crumbly as a scone, it requires no technique whatsoever, no rolling or chilling.  You just mix  the ingredients and cook in a frying pan. Eat warm from the pan, spread thick irish butter, jam or honey. Delicious!!

Ingredients: 

  • 1 cup plain flour
  • 1 tsp baking powder
  • 25gr of butter
  • 1/2 cup of milk
  • pinch of salt

Method:

  1. Sieve the flour and baking powder together into a bowl.
  2. Add the salt and cube the butter into small pieces.
  3. Rub the butter into the flour using your finger tips until it looks like breadcrumbs and has blended in nicely.
  4. Make a well and pour in the milk,  mix it well and if it seems to wet add some more flour.
  5. Empty into a lightly floured surface and roll out to about 1inch thick.
  6. Cut the dough into quarters and then eighths, like a pizza.
  7. Put the dough in a hot lightly greased frying pan.
  8. Cook for about 5 minutes on each side or until nicely browned, turning once.
