Easy Carrot Cake

Make your own homemade Carrot Cake. This easy Carrot Cake recipe is moist and delicious, if you like you can also add 1 cup of chopped walnuts to this recipe.

Serve your carrot cake with some freshly whipped cream or just on its own with a cup of tea or coffee!


  • 2 cups plain flour
  • 2 cups sugar
  • 3 cups grated carrot
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 eggs
  • 2 tsps vanilla extract
  • 2 tsps cinnamon (optional)
  • 1 1/2 cups sunflower oil
  • 1 cup raisins (optional)

Ingredients for the icing: 

  • 200gr cream cheese
  • 200gr icing sugar
  • 2 tbsps margarine


  1. Peel and grate the carrots.
  2. Add the sugar and eggs into a large bowl and mix well. Add the sunflower slowly and mix well.
  3. Sieve in the dry ingredients, add the carrots and raisins if using and mix again.
  4. Grease a round cake tin and add the mixture in.
  5. Cook in a preheated oven in a low 150-160C for 50- 60 minutes.
  6. For the icing, sieve the icing sugar in to a bowl and add the margarine and cream cheese.
  7. Mix everything together until smooth and once the carrot cake has cooled spread the icing over the cake.
  8. Enjoy!
