Sweet potato and sausage traybake

This sweet potato and sausage traybake can be ready in less than an hour.  I like using gluten free sausages as I really like the taste of them but any sausages would go great with the sweet potatoes. Turkey sausages or vegetarian sausages are also great if you would like to make this dish even healthier.

If sweet potatoes aren’t your favourite vegetable you can add any other vegetables you like.

Ingredients: 

  • 2 tbsps. olive oil 
  • 2 tsps. honey  
  • 2 tsps. English mustard 
  • 1tbsp cider vinegar 
  • 8 gluten free sausages 
  • 4- 5 sweet potatoes  
  • 2 carrots  
  • 2-3 rosemary sprigs  
  • 2 garlic gloves  

Method: 

  1. Peel and rinse the carrots and sweet potatoes. 
  2. Chop them into smaller pieces so they cook quickly.
  3. Chop the sausages in half. 
  4. Put the sweet potatoes, carrots garlic and rosemary sprigs in the tray.  
  5. Chop some of the rosemary sprigs and add to the tray as well. 
  6. Whisk the olive oil, honey, mustard and vinegar in a bowl. 
  7. Season with salt and pepper and pour over the vegetables.  
  8. Pre heat the oven to 200C. 
  9. Toss to coat everything and roast for about 20 minutes. 
  10. Remove to add the sausages, mix everything together and return to the oven for a further 20 minutes or until the vegetables are tender and soft.  
  11. Crumble over some feta cheese and serve.
