Superfood Loquat Salad

A yummy Superfood Loquat Salad perfect for a light lunch. We love the mixture of soft and crunchy, bitter and sweet and this salad is the perfect mixture of all. Loquat is known as the Japanese plum so if you can’t find loquat you can use plums or any other flowering plant fruit such as apple, peach, fig or grapes.  We added a few handfuls of fruit and nut but you can either add more or less if you don’t want any.

The ingredients below are for about 4 – 5 people.

Ingredients:

  • 1 lettuce
  • 4 carrots
  • 500gr cherry tomatoes
  • 1 cup tender baby leaves
  • a handful of walnuts
  • 1 cup peppery rocket
  • 2 onions, chopped
  • 1 cup watercress
  • handful of loquat, chopped
  • 1 cup spinach
  • a handful of raisins
  • handful of prunes, halved
  • a few dry figs

Ingredients for the dressing:

  • 6 tbsps extra virgin olive oil
  • 3 tbsps balsamic vinegar
  • 2 tbsps pure grape syrup
  • 1 tbsp honey
  • Salt & pepper
  • sprinkle of thyme and spearmint

Method:

  1. Start by rinsing all the greens well, drain and chop the lettuce.
  2. Peel the carrots in thin slices and chop the tomatoes in half.
  3. Cut the loquat, figs and prunes into smaller pieces.
  4. In a bowl add all the ingredients for the dressing and mix well.
  5. Combine all the ingredients for your salad together in a big salad bowl.
  6. Pour the dressing over the salad, mix again and your superfood salad is ready!
