Halloumi and Grape Salad

Are you looking for a light brunch? This Halloumi and Grape Salad is crisp, salty, sweet and juicy. The yummy salty halloumi cheese turns this simple salad into a special light meal with the grapes addind the sweetness.  If you are not a fan of grapes you can choose another natural sweet fruit such as sweet apples or peaches or you can use dried fruit and nuts for an extra crunch.

Ingredients: 

  1. 150gr mixed rocket salad with spinach and kale
  2. 3 slices of Halloumi Cheese
  3. 150gr mixed seedless green and red grapes
  4. 2/3 cup of shredded beetroot (optional)
  5. 4 tbsps olive oil
  6. a bit of vinegar for the dressing

Method:

  1. Rinse and wash the rocket, spinach and kale thoroughly and drain.
  2. Rinse and drain the grapes and cut into halfs.
  3. If you are using the beetroot in this recipe all we need is a bit of it shredded.
  4. Mix all the the salad leaves,grapes and beetroot together and transfer in a large salad bowl.
  5. In a non stick frying pan add a bit of olive oil and fry the sliced halloumi cheese.
  6. Fry for a few minutes until it starts to turn golden brown under, turn the halloumi and cook the other side until golden brown as well.
  7. Mix the salad well and add the halloumi slices over the salad.
  8. Mix olive oil, vinegar, salt&pepper for your dressing and pour over the salad.
  9. If you have no vinegar you can save the beetroot juice and create a dressing using the olive oil, the beetroon juice, a bit of lemon juice and salt and pepper.
  10. Serve immediately and enjoy!
