Okra with tomatoes

This Okra with tomatoes casserole is a delicious sweet vegetable dish. It is a favorite Spring lunch, especially when served with feta cheese and crusty greek bread. This dish can be served hot or at room temperature.

Ingredients: 

  • 500gr frozen okra
  • 400gr chopped tomatoes
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • a bunch of coriander
  • 2/3 cup of olive oil
  • 1/2 cup of water
  • 3 tbsps white vinegar
  • Salt&Pepper
  • pinch of sugar

Method: 

  1. If you are using fresh okra when cooking be careful to not cut into the pod as the mucilaginous liquid will be released while cooking. Cut off the conical head of each okra pod and remove the black tip at the end.
  2. If you are using frozen okra you are ready to start cooking.
  3. In a large saucepan, add the oil in high heat and fry the chopped onion and the garlic until golden.
  4. Add the okra, saute for a few minutes add the white vinegar and lower the heat.
  5. Stir in the chopped tomatoes,  sugar and salt and pepper.
  6. Shake your saucepan to distribute the okra evenly and coat them with the sauce. The okra should be immersed in the sauce, that’s why we need to add the water now.
  7. Cook gently for about 20-30 minutes, depending on the size of the okra.
  8. Add the bunch of coriander towards the end, cook for an extra 5 minutes and serve warm.
  9. Enjoy!
