Greek Olive Bread

The Greek Olive Bread or else called Eliopsomo is a tradinional greek recipe and very popular in Greece around Easter time. Not all of us like olives but olives are very popular in Mediterranean Cuisines , olives are full of the compound oleuropein, which gives them that bitter taste.

Ingredients: 

  • 3 cups of flour
  • 1 cup lukewarm water
  • 1 sachet of yeast
  • 1 tsp of salt
  • 1 tsp of oregano
  • 1 tsp of thyme
  • 100 – 150 black olives, chopped
  • 2 tbsps olive oil

Method: 

  1. Rinse and chop the olives in halfs.
  2. In a large bowl add the flour and salt and mix together.
  3. Add the yeast,oregano, thyme, water and olive oil and with a mixer stir everything together.
  4. Knead for about 10 minutes until you have a soft dough.
  5. Towards the end add in the olives and knead again until the olives are well incorporated in the dough.
  6. Let the dough sit in a large bowl in a warm place for about 40 minutes or until it has doubled in size.
  7. Once your dough has doubled, move it to a clean surface.
  8. Lightly flour the surface and knead once or twice.
  9. Now, you can either bake a big loaf or divide the dough into smaller pieces.
  10. Grease a baking tray and bake in a pre – heated oven at 160C for about 45- 55 minutes.
  11. The time can depend on the shape of your bread, so keep an eye out.
