Courgette Pizza Bites

These Courgette Pizza Bites are all over the internet but for some reason we had never tried to make them. Yesterday afternoon we were craving a pizza or something bad but we are both on a healthy kick. The following recipe is our version of these pizza bites, that is extremely healthy and low in fat. We only made enough for two people so if you are making these to share with friend you should double or triple the recipe.

Ingredients for the homemade tomato sauce: 

  • 4 medium sized tomatoes
  • 1 tbsp olive oil
  • a few basil leaves
  • sprinkle of oregano
  • 1/2 tsp brown sugar (optional)
  • Salt&Pepper


  • 1/2 courgette, sliced
  • 60gr light mozzarella cheese
  • 1 slice pepperoni
  • a few basil leaves


  1. Cut the tomatoes in halves and add in a food processor.
  2. Add olive oil, a basil leaves, sugar, oregano and seasoning.
  3. Bled well until you have a juicy sauce.
  4. Slice half the courgette in thin slices.
  5. Line a baking tray with foil and add the slices one next to each other.
  6.  Pour over one teaspoon of tomato sauce on every slice and spread.
  7. Next, sprinkle with the low-calorie cheese and add some pepperoni on top.
  8. We wanted to have a tiny bit of pepperoni in our so with literally slice on slice into tiny little pieces.
  9. If you like you can add more pepperoni or even some mushrooms on top.
  10. In a pre-heated oven cook for about 15 minutes at 170C or until the cheese is golden brown and the courgettes soft.
  11. Serve with basil leaves and sprinkle or olive oil!
