Cheese and Bacon Tart

This Cheese and Bacon Tart is delicious and perfect for lunch with with a side sald or some warm homemade soup.

Ingredients for the pastry:

  • 250gr flour
  • 150gr butter
  • 1 tsp of salt
  • 1-2 tbsp water might be needed

Ingredients for the filling:

  • 200gr bacon
  • 100gr mozzarella
  • 100gr regato cheese
  • 200gr fresh cream
  • 3 eggs
  • salt & pepper
  • pinch of nutmeg


  1. We want to start with our base.
  2.  To make the pastry first cut the butter into small cubes. Keep the butter in the fridge so it’s easier to cut.
  3. In a large bowl add the flour, salt and the cubes of butter. Using your hands mix the butter with the flour until a dough starts forming.
  4. If you need add a bit of water, a few tbsps until the mix binds and it becomes a dough.
  5. Gather the dough into a ball and let it sit in a cool place or the fridge for 30 minutes.
  6. Roll out your dough and line the pastry into the base of a tin and trim the pastry edges  if needed.
  7. Press the pastry in well and very lightly prick the base with a fork.
  8. Let the pastry cool for a few minutes before adding the filling.

For the filling: 

  1. Cut the bacon into small pieces.
  2. In a bowl add the eggs and fresh cream.
  3. Add a bit of salt and pepper and the nutmeg and mix all the ingredients well.
  4. Over your pastry base sprinkle the bacon, mozarrella and regato cheese.
  5. Pour over your cream mixture evenly.
  6. Bake in a preheated oven on 170C for about 30 minutes.
  7. Your Cheese and Bacon Tart will be ready when it’s golden brown on top.
