Pasta Croquettes with Bacon
Yummy yummy Pasta Croquettes with bacon ! A perfect recipe to use leftover pasta.
Ingredients:
- 500gr macaroni or chifferi pasta
- 150gr bacon
- 3 garlic cloves, minced
- 4 tbsps olive oil
- 4 tbsps flour
- 1 cup milk
- 1 cup beer
- 1/2 green pepper, chopped
- 250gr cheddar cheese
- 250gr mozarella chese
- 1/2 red pepper, choped
- 1/2 yellow pepper choped
- Half a cup of sweet corn
Ingredients for Frying:
- 300gr all purpose flour
- 2 large eggs
- 3 tbsps milk
- 200gr breadcrumbs
- 1lt sunflower oil
Method:
- Chop all the peppers into small pieces and have the sweet corn ready.
- Cook the pasta according to the directions and drain.
- While the pasta is left to cool you can start preparing the rest of the ingredients.
- In a pan add the olive oil and start frying the bacon, add the garlic and saute for about 3 minutes.
- In medium heat stir in the flour and slowly pour in the milk.
- Pour in the milk in about 3 portions, pour in, stir and pour again.
- Next add the beer, stir for a few minutes and the chopped peppers and sweet corn.
- With one hand keep stirring and with the other hand slowly add all the cheese.
- Add your drained pasta in a big bowl and add the cheese mixture over it.
- Mix well and let it cool until you prepare the rest of the ingredients.
- In three bowls separate your eggs, the milk and the breadcrumbs.
- If you like you can add salt and pepper in the flour.
- Prepare a baking tray to have on the side and start forming balls with the pasta mixture.
- Deep the croquettes one by one in the flour first and return to the baking tray.
- Using a fork start deeping each ball into the eggs and then in the breadcrumbs.
- Return all your pasta croquettes on the baking tray.
- You will have about 30 – 40 croquettes so if you like at this point you can freeze some of them for later use.
- Let the croquettes sit for about an hour.
- To fry the croquettes, heat the sunflower oil and fry each croquette for about 2-3 minutes.
- Serve warm and enjoy with a refreshing yogurt sauce!
