Warm Black Eyed Bean Salad
This Warm Black Eyed Bean Salad is a very easy dish. Black eyed beans are very easy to prepare and don’t need to be soaked overnight. If you like you can buy ready cooked black eyed beans in a tin to make a quick lunch. You can serve the warm beans with just a drizzle of olive oil, some lemon juice and a sprinkle of dill or you can experiment and add other ingredients you might like.
In order to make the beans skin a bit harder so they don’t fall to bits we will cook them twice. The recipe below serves 4 people and we have used cooked beetroot and lots of lemon juice for our salad.
Ingredients :
- 250gr black eyed beans
- 8-10 tbsps olive oil
- juice of 1 lemon
- 3 tbsps fresh dill
- Salt and pepper
Method:
- Rinse the beans well and drain them.
- Add all the beans in a big saucepan and add water to cover them.
- Over low heat bring them to boil and as soon as the water starts boiling remove quickly.
- Drain all the water and put the beans back in the saucepan and cover with fresh cold water.
- Add a bit of salt and over low-medium heat bring the beans to the boil.
- Lower the heat and cook until nice and soft, about 20 minutes.
- Try and see if you beans are soft and drain the water.
- You can keep a few tablespoons of the cooking water and add later in your salad.
- In a large salad bowl mix the beans with all the ingredients your using, add the cooking water, olive oil and lemon juice and mix well.
- Serve warm and enjoy!
