Refreshing Cracked wheat and Parsley Salad

Cracked wheat groats work really well in a cold salad. This Refreshing Cracked wheat and Parsley Salad is so easy to make and full of goodness. The salad is fresh, crisp and healthy. If you like you can use couscous or quinoa instead.

This salad is known in the Middle East as Tabbouleh Salad and some people wrap the salad around lettuce leaves and eat it like that. Some of the benefits of Parsley is that it can control diabetes and prevent osteoporosis.

Ingredients: 

  • 3 sprigs of fresh parsley
  • 4 tbsps cracked wheat
  • 4 tomatos, chopped
  • 1 onion, chopped
  • 1/2 lemon
  • 2 tbsps olive oil
  • Pinch of salt
  • Lettuce leaves (optional)

Method:

  1. To soak the cracked wheat, just pour hot water over to cover by 1/2 inch.
  2. Set aside to soak for about 20 minutes.
  3. Chop the parsley and the tomatoes very finely.
  4. Chop the onions and add all the ingredients in a bowl.
  5. By now the crached wheat will be ready, get rid of any excess water and add in the bowl with the rest of the ingredients.
  6. Whisk oil and lemon juice.
  7. Add the dressing in the bowl and mix all the ingredients together.
  8. Season to taste and enjoy!
