Yogurt and Courgette Dip

This Yogurt and Courgette dip is easy, refreshing and lovely with some homemade crusty bread.  If you don’t want it very garlicky add 1-2 garlic cloves and for a lighter version use zero fat yogurt.

Instead of using a fork to mash the courgettes you can use a blender and add the courgettes, garlic, olive oil and process until well blended. You can then stir into the yogurt and taste to see if you want to add extra salt.

One last tip is to place the sauce in the fridge before serving, the longer the better. That way all the flavors blend and the taste is just amazing!

Ingredients: 

  • 2-3 courgettes
  • 500 gr Greek yogurt
  • 3-5 garlic cloves, minced
  • 1 tbsp olive oil

Method:  

  1. In a saucepan add the courgettes and add water.
  2. Boil in high heat for about 15 minutes, until soft.
  3. Once done, add the courgettes in a bowl and mash using a fork.
  4. Let the courgettes chill and remove and excess water.
  5. In a bowl add the yogurt, mince garlic and olive oil.
  6. Add the mashed courgettes and mix everything together.
  7. If you want you can use a blender to combine all the ingredients together.
  8. Enjoy!
