Mujadara Lentils and Bulgur Wheat

A recipe from Syria. Mujadara Lentils and Bulgur Wheat is a signature Middle Eastern recipe usually made with lentils, rice and crispy onions. In our family the recipe was made using Bulgur Wheat but if it’s not available to you, rice is the perfect option.

Just follow the same steps below to recreate this beautiful dish.

Ingredients:

  • 2 cups lentils
  • 6 cups of water (for the lentils)
  • 2 1/2 cups of Bulgur Wheat
  • 2 onions
  • salt & pepper
  • a bit of cumin
  • 4 cups of water

Ingredients for yogurt sauce:

  • 500gr greek style yogurt
  •  1/2 cucumber
  • 2 tbsps dried mint or spearmint

Method:

  1. Rinse the lentils well and remove any little stones.
  2. Place the lentils in a saucepan with the six cup of water.
  3. Brin the water to boil and in medium-low heat simmer the lentils for about 30 minutes or until soft.
  4. Drain the lentils and set aside.
  5. Chop the one onion in thin slices.
  6. In a pan heat the oil over medium- high heat and add the onions.
  7. Saute the onions until dark golden brown, darker that usual.
  8. Move the lentils in a saucepan and add the remaining 4 cups of water over medium heat.
  9. Once the water is warm add the onions and the bulgur wheat.
  10. Let it cook all together over medium-low heat.
  11. Keep an eye in case you need to add a bit more water.
  12. Chop the other onion and cook until dark golden brown.
  13. Keep an eye when cooking the onion because it can turn from golden brown to dark very quickly.
  14. Remove as soon as it turns a lovely dark golden brown colour.
  15. Serve your Mujadara warm with a refreshing yogurt sauce!

Method for Yogurt Sauce: 

  1. Grate the cucumber.
  2. Mix the yogurt, cucumber and mint all together.
  3. Enjoy!
