Middle Eastern style rice with chicken

This Middle Eastern style rice with chicken is aromatic, flavourful and very impressive if your cooking for friends.

Ingredients for the rice: 

  • 3 cups of rice
  • 3 tbsps of butter (arabic butter is available)
  • 6 cups warm water
  • 2 big onions, chopped
  • 1 tsp cumin
  • 2 cinnamon sticks
  • 1/2 tsp ground nutmeg
  • 2 bay leaves
  • 2 star anise
  • 2 cloves
  • Salt & Pepper

Ingredients for the red sauce: 

  • 300gr chicken breast
  • 2 cans chopped tomatoes
  • 1 onion,chopped
  • 2 garlic cloves,minced
  • 1/2 glass of water
  • 6 tbsps olive oil
  • sprinkle of dry mint
  • 1 cinnamon stick
  • Salt& Pepper


  1. In a large wide saucepan melt the butter and then add the chopped onions.
  2. Rinse the rice and set to the side.
  3. Saute the onions on high heat until golden brown.
  4. Lower the heat to medium, add the rice and saute for just a few minutes.
  5. Add 6 cups of warm water and stir well.
  6. Add one by one all the herbs and let it boil.
  7. Once it boils lower the heat, cover and let it simmer for about 15- 20 minutes.
  8. When it’s ready you will usually notice little holes that means your rice is perfectly cooked.
  9. We are going to serve our rice with a delicious red sauce and chicken.
  10. Chop the chicken breasts into cubes and in a pan add the olive oil and cook until half cooked.
  11. Add the onions and garlic and saute all together.
  12. Add the chopped tomatoes, water, herbs and seasoning.
  13. Let it cook on medium heat for about 20-30 minutes.
  14. Pour the red sauce with the chicken over your rice and serve warm.
  15. Enjoy!
