Pasta with yogurt sauce

A quick, refreshing and healthy recipe ideal for vegetarians!
This Pasta with yogurt sauce recipe is a middle eastern adaptation of the famous Ma’acaroni bel-laban, a very easy spaghetti recipe with a simple yogurt sauce. The sauce only needs 3 ingredients, yogurt, garlic and a sprinkle of Spearmint or parsley.
A few tips for when making this recipe is to firstly make sure to add the salt after the water boils and to add a little bit of olive oil so the pasta doesn’t get stuck together. If you are not in a hurry  you can create a pesto using pinenuts, herbs and olive oil and then mix it with the yogurt and minced garlic.
For an even healthier version you can use 0% fat yogurt and whole wheat pasta, the result is as tasty! Low calorie yogurts are a bit more watery so if using you might not need to use any reserved water when making the yogurt sauce.
All you need is 15 minutes or less and your dish is ready! A very speedy recipe for the days you don’t have time or the patience to cook, perfect for a midweek meal and for people on a low calorie diet.
Ingredients:
  • 500gr pasta of your choice
  • 200gr yogurt
  • 1 garlic clove, minced
  • sprinkle of spearmint ( optional)
Method:
  1. Mince the garlic.
  2. Boil the pasta in salted water and when ready strain the water and reserve some of it.
  3. Add a bit of olive oil to keep it shiny and smooth.
  4. In a big serving bowl mix the yoghurt with the garlic and some of the reserved water.
  5. As mentioned earlier if you are using a low calorie yogurt or a yogurt that is watery you don’t need to add the reserved water.
  6. Mix well until smooth and add the herbs.
  7. Add the pasta on a plate, pour over your yougurt sauce and serve.
  8. Enjoy!
