Greek Spinach with Rice


  • 1 kg fresh spinach rinsed
  • 1 onion chopped
  • ½ cup of rice
  • ½ cup olive oil
  • 1-2 tablespoons chopped dill
  • ½ cup water
  • Salt/Pepper
  • Juice from 1 lemon


  1. Rinse spinach.
  2. In a large pot add the olive oil and onions and cook for 2-3 minutes.
  3. Add  the spinach.
  4. When the spinach has reduce in size add the water and let it boil for 5 minutes.
  5. Add the rice, dill and simmer until rice is soft.
  6. Once its ready add the lemon juice.
  7. Serve warm with a bit of olive oil.
  8. Enjoy your Greek Spinach with Rice.
