Gigantes: Greek Baked Beans

Ingredients:

  • 500gr dried beans
  • 2 onions, chopped
  • 4 garlic cloves
  • ¾ cup chopped fresh parsley
  • 1 tbsp oregano
  • 1 tbsp salt
  • 2 tsp black pepper
  • 1 cup olive oil
  • 2 cups chopped tomatoes
  • 1 sliced tomato

Method:

  1. Soak dried beans overnight or at least 8 hours. Boil for 50 minutes and add the 2 garlic gloves.
  2. When it’s boiling you will notice a layer of froth, remove the froth and then remove the 2 garlic cloves.
  3. Drain beans but keep a cup of water.
  4. Sauté chopped onions in olive oil over medium low heat until tender.
  5. Add garlic and cook for another few minutes
  6. Add herbs and spices, mix to combine completely and cook for just a minute to combine everything.
  7. Add chopped tomatoes, stir to combine and cook for 5 minutes.
  8. Add reserved bean water add beans, mix everything all together and boil for an extra 15 mins in law heat.
  9. When beans start to crack they are ready.
  10. Layer beans evenly in baking pan and bake, uncovered, for 1/2 hour in 250 – 300 c degree oven.
  11. If you want you can add a layer of tomato slices to prevent the food from burning.
  12. Allow baked beans to rest for about 15-30 minutes before serving.
  13. Serve with feta cheese and bread.
