Greek Spinach with Rice
Ingredients:
- 1 kg fresh spinach rinsed
- 1 onion chopped
- ½ cup of rice
- ½ cup olive oil
- 1-2 tablespoons chopped dill
- ½ cup water
- Salt/Pepper
- Juice from 1 lemon
Method
- Rinse spinach.
- In a large pot add the olive oil and onions and cook for 2-3 minutes.
- Add the spinach.
- When the spinach has reduce in size add the water and let it boil for 5 minutes.
- Add the rice, dill and simmer until rice is soft.
- Once its ready add the lemon juice.
- Serve warm with a bit of olive oil.
- Enjoy your Greek Spinach with Rice.
