Gigantes: Greek Baked Beans
Ingredients:
- 500gr dried beans
- 2 onions, chopped
- 4 garlic cloves
- ¾ cup chopped fresh parsley
- 1 tbsp oregano
- 1 tbsp salt
- 2 tsp black pepper
- 1 cup olive oil
- 2 cups chopped tomatoes
- 1 sliced tomato
Method:
- Soak dried beans overnight or at least 8 hours. Boil for 50 minutes and add the 2 garlic gloves.
- When it’s boiling you will notice a layer of froth, remove the froth and then remove the 2 garlic cloves.
- Drain beans but keep a cup of water.
- Sauté chopped onions in olive oil over medium low heat until tender.
- Add garlic and cook for another few minutes
- Add herbs and spices, mix to combine completely and cook for just a minute to combine everything.
- Add chopped tomatoes, stir to combine and cook for 5 minutes.
- Add reserved bean water add beans, mix everything all together and boil for an extra 15 mins in law heat.
- When beans start to crack they are ready.
- Layer beans evenly in baking pan and bake, uncovered, for 1/2 hour in 250 – 300 c degree oven.
- If you want you can add a layer of tomato slices to prevent the food from burning.
- Allow baked beans to rest for about 15-30 minutes before serving.
- Serve with feta cheese and bread.
