Forest Fruit Sorbet

Ingredients:  

  • 500gr frozen forest fruit
  • 180gr sugar
  • 300ml water
  • ½ juice of lemon
  • Handful of walnuts

Method:  

  1. Rinse the frozen forest fruit with some water.
  2. Place the sugar in a saucepan with the water.
  3. Heat in medium heat until the sugar has dissolved and boil for 1 minute until the mixture is slightly syrupy.
  4. Pour the syrup into a bowl, add the lemon juice.
  5. Combine the syrup and forest fruit in a bowl and use a hand blender to blend everything together.
  6. Press the mixture through a sieve and then put the mixture in an ice cream container.
  7. Put the container in the freezer and after 2 hours take the mixture out and break up the ice with a fork, then return to the freezer for another 2 hours.
  8. Continue to break up the ice every few hours until the mixture is firm.
  9. Move the container to the fridge 20 minutes before serving.
  10. Serve your Forest Fruit Sorbet with a few walnuts.
  11. Enjoy!
