Banana and Walnut Cake

Are you looking for a sweet treat? A Banana and Walnut cake is moist, sweet and just delicious. Perfect to have with a warm cup of tea. I personally thought walnuts gave the cake a nice crunch but you can make the cake with other nuts or no nuts at all, pecans are also lovely in this cake.

If you like you can add a caramel sauce as a topping. I used almond milk and brown sugar in this recipe but you could use fresh milk or low fat milk and caster sugar instead.

Ingredients: 

  • 170 gr soft brown sugar
  • 125gr butter
  • 2 eggs
  • 1 1/2 cups self raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 cup almond milk
  • 2 ripe bananas
  • 1/2 tsp cinnamon
  • 1/2 cup walnuts, chopped
  • 1 tsp vanilla extract

Method:

  1. Cut the butter into small pieces and add it in a bowl with the sugar.
  2. Mix the butter and sugar until fluffy, if you find it hard to mix the ingredients break the butter up with your fingers.
  3. Add  the vanilla extract and the eggs one at a time.
  4. In another bowl mash the bananas with a fork and then add in the mixture.
  5. Sift the flour and and bicarbonate of soda and then add to the mixture.
  6. Add the almond milk, walnuts and mix everything together.
  7. Preheat the oven to 180C and grease the baking tin.
  8. Bake for 50 – 60 minutes.
  9. You can serve this cake with a caramel topping or with a scoop of vanilla ice cream.
