Banana and Walnut Cake
Are you looking for a sweet treat? A Banana and Walnut cake is moist, sweet and just delicious. Perfect to have with a warm cup of tea. I personally thought walnuts gave the cake a nice crunch but you can make the cake with other nuts or no nuts at all, pecans are also lovely in this cake.
If you like you can add a caramel sauce as a topping. I used almond milk and brown sugar in this recipe but you could use fresh milk or low fat milk and caster sugar instead.
Ingredients:
- 170 gr soft brown sugar
- 125gr butter
- 2 eggs
- 1 1/2 cups self raising flour
- 1/4 tsp bicarbonate of soda
- 1/2 cup almond milk
- 2 ripe bananas
- 1/2 tsp cinnamon
- 1/2 cup walnuts, chopped
- 1 tsp vanilla extract
Method:
- Cut the butter into small pieces and add it in a bowl with the sugar.
- Mix the butter and sugar until fluffy, if you find it hard to mix the ingredients break the butter up with your fingers.
- Add the vanilla extract and the eggs one at a time.
- In another bowl mash the bananas with a fork and then add in the mixture.
- Sift the flour and and bicarbonate of soda and then add to the mixture.
- Add the almond milk, walnuts and mix everything together.
- Preheat the oven to 180C and grease the baking tin.
- Bake for 50 – 60 minutes.
- You can serve this cake with a caramel topping or with a scoop of vanilla ice cream.
