Artichokes in Egg and Lemon juice


  • 10 frozen artichokes
  • 5 carrots
  • 5 potatoes
  • 4 fresh chopped onions
  • Dill
  • 2 eggs
  • The juice of 1 lemon
  • 100gr of olive oil
  • 1tbsp of corn flour
  • Salt & pepper


  1. In a pot add olive oil and sauté onions.
  2. Add chopped carrots and potatoes.
  3. When sauté add the artichokes.
  4. Add water to cover the artichokes and put the lid on the pot.
  5. Let it boil for ½ hour.
  6. When it starts boiling, turn off the heat, and add chopped dill, salt and pepper.
  7. In a bowl mix 2 eggs, 2 tbsp water, corn flour and lemon juice.
  8. Then add some juice from the pot and mix well, we slowly add juice from the pot so the eggs don’t cook.
  9. When the egg and lemon mixture is warm add the mixture in the pot.
