Greek Peas in Red Sauce

This Greek Peas in Red Sauce recipe is a greek wintery dish. A lovely vegeterian stew with potatoes cut into cubes, carrots and  peas. You can give this dish your own touch by adding your favourite vegetables. If you live in a warm country with juicy fresh tomatoes then use fresh tomatoes instead of tinned tomatoes.

Ingredients:

  • 500gr frozen peas
  • 6- 8 small rooster potatoes
  • 4 medium carrots
  • 2- 3tbsps olive oil
  • 1 big chopped onion
  • 1 tin of chopped tomatoes whizzed
  • 1 glass water
  • ½ tsp of sugar
  • 1 vegetable stock cube
  • drizzle of dill
  • Salt & pepper

Method:

  1. In a big saucepan sauté chopped onion in olive oil and cook for 3-4 minutes.
  2. Cut the carrots and potatoes into small cubes.
  3. Add carrots and potatoes and cook for an extra 2 minutes and then add the frozen peas.
  4. Stir well so they are coated with the olive oil and onions.
  5. Lower the heat and cook for 3-4 minutes and then add one small cup of vegetable stock.
  6. Cook for an extra 10 minutes.
  7. Finally add chopped tomatoes, sugar, salt & pepper.
  8. Add the water and cook for an extra 15 – 20 minutes until most of the juice has been absorbed.
  9. Let it sit for 10 minutes before serving.
  10. Serve with some fresh bread and Greek feta cheese.
  11. Enjoy your Greek Peas!
