Artichokes in Egg and Lemon juice
Ingredients:
- 10 frozen artichokes
- 5 carrots
- 5 potatoes
- 4 fresh chopped onions
- Dill
- 2 eggs
- The juice of 1 lemon
- 100gr of olive oil
- 1tbsp of corn flour
- Salt & pepper
Method
- In a pot add olive oil and sauté onions.
- Add chopped carrots and potatoes.
- When sauté add the artichokes.
- Add water to cover the artichokes and put the lid on the pot.
- Let it boil for ½ hour.
- When it starts boiling, turn off the heat, and add chopped dill, salt and pepper.
- In a bowl mix 2 eggs, 2 tbsp water, corn flour and lemon juice.
- Then add some juice from the pot and mix well, we slowly add juice from the pot so the eggs don’t cook.
- When the egg and lemon mixture is warm add the mixture in the pot.
