Rice Pudding with Caramel Topping
This delicious Rice Pudding with Caramel Topping recipe is a must try! Rice Puddings are very popular in greece as desserts and can be served warm or cold. We wanted to use the traditional recipe and add a new modern spin to it.
Ingredients:
- 6 tbsps short grain white rice
- 1 lt full fat milk
- 1/2 glass of water
- 6 tbsps sugar
- 1/2 glass water
- 5 tbsps cornflour
- 1 tbsp rose water
Ingredients for the Caramel Topping:
- 5 tbsps sugar
- a bit of water
Method:
- In a large saucepan add the rice, water and let it simmer over medium heat.
- Keep an eye, we don’t want the rice do go dry.
- Once the rice is soft ( after 10 minutes) pour in the milk.
- Stir in the sugar and let it simmer in low heat without covering.
- It’s important to reduce the heat to medium- low and gently cook the rice pudding.
- Now add more water and just before it comes to a boil add the cornflour.
- Cook for a few more minutes until you have a thick, custard like texture.
- If your rice pudding isn’t thick add more cornflour in the mixture.
- Remove the saucepan from the heat and add the rosewater and stir well.
- Now for the caramel topping, in a small saucepan add the sugar over high heat.
- Keep stirring and stirring the sugar, when it starts melting sprinkle some water and once it takes a dark brown colour remove from the heat.
- Pour the rice pudding into small bowls and add the Caramel on top.
- Enjoy!
