Tandoori Chicken Curry
Ingredients:
- 2 breasts of Chicken, cut into small pieces
- 2 tbsps vegetable oil
- 1 cup coconut milk
- 2 garlic cloves, minced
- 2 slices ginger, minced
- 3 large chestnut mushrooms, chopped
- 2 tbsps tandoori curry powder
Method:
- Season the chicken with salt and pepper.
- In a skillet add the oil over medium heat.
- Add the ginger and garlic and fry for a few minutes.
- Add the tandoori powder and stir. Fry for another minute.
- Turn up the heat and add the chicken, cook until browned.
- Pour in the coconut milk.
- Bring to a simmer, add the mushrooms and simmer for another few minutes.
- Serve your Tandoori Chicken Curry with some basmati rice.
