Victoria Sponge Cake with Lemon icing

Royalty cake must be be good right? This traditional Victoria Sponge Cake has a little twist with the Lemon Icing. This cake recipe is perfect for birthday cakes or tea party you want to impress your friends.

Ingredients:

  • 2 baking tins
  • 3 eggs
  • Self -raising flour
  • 1 heaped tsp Baking powder
  • Vanilla extract (Optional)
  • Sugar
  • Butter or margarine
  • Strawberry or Raspberry jam
  • Cream
  • Icing sugar

Method:

  1. Weigh the eggs.
  2. 3 eggs are usually 150gr so we will add 150gr of self-raising flour, sugar and butter.
  3. Mix the butter and sugar until fluffy.
  4. Beat eggs together and add a little at a time in the mixture.
  5. Sieve flour and baking powder and add the vanilla.
  6. Prepare tins and bake the mixture for 20 – 30 minutes at 180c.
  7. When baked remove and cool.
  8. Whip the cream and then spread it at the bottom half of the sponge cake.
  9. Then add the jam and put the other half on top of it.

Lemon Icing:

  1. Squeeze half of a lemon and steer with a fork as you add the icing sugar.
  2.  Keep steering until you get a thick paste.
  3. Pour over the top of the cake and leave it to solidify.
