Greek Lentil Soup

This Greek Lentil Soup is more like a stew, a very easy and delicious vegetable stew , that is perfect for dinner for those cold winter nights. For this recipe we used green lentils but any other lentils would be great too. Lentils are a great source of soluble fiber which helps reduce blood cholesterol.

Ingredients for 7-8 servings:

  • 500gr lentils
  • 3 tbsps olive oil
  • 2 tins chopped tomatoes
  • 1 big onion, minced
  • 1 large carrot, chopped (optional)
  • 2 garlic cloves, minced
  • Drizzle of vinegar (optional)
  • 2 bay leaves
  • Sprinkle of sugar

Method: 

  1. Rinse the lentils with plenty of water.
  2. Place the lentils in a large saucepan and cover with water.
  3. Bring water to boil and reduce to medium heat.
  4. Add the chopped tomatoes with a sprinkle of sugar.
  5. Add minced onion and garlic cloves and carrots if you are using.
  6. Simmer until lentils are soft, about 30 minutes and stir occasionally.
  7. Add salt and pepper and add a drizzle of vinegar.
  8. If the soup becomes thick just add more water.
  9. Enjoy your Greek Lentil soup with some feta cheese and dried bread.
