Baked Sweet Potato and Egg

I love eggs but wanted to try something different and healthier this time. Sweet potatoes contain lots of antioxidants and are wonderfully filling.


  • 1 medium sweet potato
  • 1 egg
  • 2-3 tsps olive oil
  • A sprinkle of paprika
  • A handful of rocket leaves
  • Salt & Pepper


  1. Wash the sweet potato and place in a baking tray.
  2. Sprinkle some salt and coat with olive oil.
  3.  In a preheated oven, place in the middle and bake for 60 minutes in 180C.
  4. Once your sweet potato is soft, remove and either cut in half or cut the top off.
  5. With a spoon try to create a well in the middle of the sweet potato.
  6. Then crack an egg into the well.
  7. Add the sweet potato back in the oven and bake until your egg is cooked.
  8. Make sure the potato is supported (since mine turned and half of the egg spilled).
  9. While your egg is baking, wash your rocket leaves and place on to a plate.
  10. Serve your Baked Sweet Potato and Egg with some paprika and salt &pepper.
