Greek Lentil Soup
This Greek Lentil Soup is more like a stew, a very easy and delicious vegetable stew , that is perfect for dinner for those cold winter nights. For this recipe we used green lentils but any other lentils would be great too. Lentils are a great source of soluble fiber which helps reduce blood cholesterol.
Ingredients for 7-8 servings:
- 500gr lentils
- 3 tbsps olive oil
- 2 tins chopped tomatoes
- 1 big onion, minced
- 1 large carrot, chopped (optional)
- 2 garlic cloves, minced
- Drizzle of vinegar (optional)
- 2 bay leaves
- Sprinkle of sugar
Method:
- Rinse the lentils with plenty of water.
- Place the lentils in a large saucepan and cover with water.
- Bring water to boil and reduce to medium heat.
- Add the chopped tomatoes with a sprinkle of sugar.
- Add minced onion and garlic cloves and carrots if you are using.
- Simmer until lentils are soft, about 30 minutes and stir occasionally.
- Add salt and pepper and add a drizzle of vinegar.
- If the soup becomes thick just add more water.
- Enjoy your Greek Lentil soup with some feta cheese and dried bread.
