Easy Carrot Cake
Make your own homemade Carrot Cake. This easy Carrot Cake recipe is moist and delicious, if you like you can also add 1 cup of chopped walnuts to this recipe.
Serve your carrot cake with some freshly whipped cream or just on its own with a cup of tea or coffee!
Ingredients:
- 2 cups plain flour
- 2 cups sugar
- 3 cups grated carrot
- 1 tsp baking powder
- 1 tsp baking soda
- 4 eggs
- 2 tsps vanilla extract
- 2 tsps cinnamon (optional)
- 1 1/2 cups sunflower oil
- 1 cup raisins (optional)
Ingredients for the icing:
- 200gr cream cheese
- 200gr icing sugar
- 2 tbsps margarine
Method:
- Peel and grate the carrots.
- Add the sugar and eggs into a large bowl and mix well. Add the sunflower slowly and mix well.
- Sieve in the dry ingredients, add the carrots and raisins if using and mix again.
- Grease a round cake tin and add the mixture in.
- Cook in a preheated oven in a low 150-160C for 50- 60 minutes.
- For the icing, sieve the icing sugar in to a bowl and add the margarine and cream cheese.
- Mix everything together until smooth and once the carrot cake has cooled spread the icing over the cake.
- Enjoy!
