Chocolate Orange Cupcakes
These cupcakes are made using a recipe i usually use for a Gooey Chocolate Cake, the difference is that since these cupcakes are much smaller the middle isn’t as Gooey. The result is still delicious as you bake these fluffy dark chocolate and orange cupcakes.
A few tips for when baking these Chocolate Orange Cupcakes is to keep an eye when baking, if you want the middle to be a bit gooey you can bake for a few minutes less. When testing to see if the cupcakes are ready using a thin skewer or just a simple toothpick. If you insert it into the center of the cake, it should come out clean, with no streaks of batter. A few small crumbs are ok because the middle will be a bit more gooey. Lastly, when working with chocolate, be careful not to heat it above 65C.
Ingredients:
- 120gr dark chocolate
- 110gr butter
- 4 eggs
- 150gr white sugar
- 60gr plain flour
- 15gr cocoa powder
- Zest of 1 orange
Method:
- Place the chocolate in a heatproof bowl over a pan of simmering water.
- The base of the bowl should sit above the water without touching it.
- Add the butter and allow the chocolate to melt so that it is smooth and shiny.
- Whisk the eggs and sugar until the mixture is fluffy .
- Then add the melted chocolate and butter.
- Sieve the flour and cocoa powder, add in the mixture and whisk well.
- Finally add the zest of 1 large orange.
- Preheat oven and bake for 10-20 minutes at 200-210c.
- If you are baking these cupcakes around Christmas time you can decorate with some edible christmas cake decorations.
