Baked Sweet Potato and Egg
I love eggs but wanted to try something different and healthier this time. Sweet potatoes contain lots of antioxidants and are wonderfully filling.
Ingredients:
- 1 medium sweet potato
- 1 egg
- 2-3 tsps olive oil
- A sprinkle of paprika
- A handful of rocket leaves
- Salt & Pepper
Method:
- Wash the sweet potato and place in a baking tray.
- Sprinkle some salt and coat with olive oil.
- In a preheated oven, place in the middle and bake for 60 minutes in 180C.
- Once your sweet potato is soft, remove and either cut in half or cut the top off.
- With a spoon try to create a well in the middle of the sweet potato.
- Then crack an egg into the well.
- Add the sweet potato back in the oven and bake until your egg is cooked.
- Make sure the potato is supported (since mine turned and half of the egg spilled).
- While your egg is baking, wash your rocket leaves and place on to a plate.
- Serve your Baked Sweet Potato and Egg with some paprika and salt &pepper.
