Victoria Sponge Cake with Lemon icing
Royalty cake must be be good right? This traditional Victoria Sponge Cake has a little twist with the Lemon Icing. This cake recipe is perfect for birthday cakes or tea party you want to impress your friends.
Ingredients:
- 2 baking tins
- 3 eggs
- Self -raising flour
- 1 heaped tsp Baking powder
- Vanilla extract (Optional)
- Sugar
- Butter or margarine
- Strawberry or Raspberry jam
- Cream
- Icing sugar
Method:
- Weigh the eggs.
- 3 eggs are usually 150gr so we will add 150gr of self-raising flour, sugar and butter.
- Mix the butter and sugar until fluffy.
- Beat eggs together and add a little at a time in the mixture.
- Sieve flour and baking powder and add the vanilla.
- Prepare tins and bake the mixture for 20 – 30 minutes at 180c.
- When baked remove and cool.
- Whip the cream and then spread it at the bottom half of the sponge cake.
- Then add the jam and put the other half on top of it.
Lemon Icing:
- Squeeze half of a lemon and steer with a fork as you add the icing sugar.
- Keep steering until you get a thick paste.
- Pour over the top of the cake and leave it to solidify.
