4 Ingredient Soup


  • 400gr potatoes peeled and cubed
  • 400gr onions, finely diced.
  • 700gr leek, washed and diced.
  • 100gr bacon
  • Salt, pepper, thyme (optional)
  • 1 vegetable stock cube
  • 4tbsp olive oil



  1. In a large saucepan add olive oil and sauté onions for 3- 4 minutes.
  2. Add the potatoes, bacon and leek and cook for another 4 minutes.
  3. Add some salt, pepper, thyme.
  4. Add the vegetable stock cube and enough water to cover the ingredients.
  5. Let the soup boil for about half hour in the low heat.
  6. Remove from the heat and use a food processor to puree the soup.
  7. Taste to season and serve hot.
