Salmon on a bed of garlic courgettes

For an even healthier meal, you can cook the courgettes using coconut oil instead of olive oil.

Ingredients:

  • 2-3  courgettes
  • 3-4 tbsps olive oil
  • 2 garlic cloves
  • 2 salmon fillets
  • 1tbsp lemon juice
  • Salt & pepper

Method:

Courgettes:

  1. Remove the courgette flowers if there are any and slice the courgettes into pieces.
  1. In a saucepan add olive oil and heat up over medium heat.
  1. Add minced garlic and then add courgettes.
  1. Cook until ready and stir occasionally.

Salmon: 

  1. Oil the Salmon and lemon juice, add salt and pepper.
  1. Place the salmon fillet on a sheet of foil and wrap the ends of the foil.
  1. Bake until the salmon is just cooked through, about 25 minutes in a preheated oven at 200C.
