Salmon on a bed of garlic courgettes
For an even healthier meal, you can cook the courgettes using coconut oil instead of olive oil.
Ingredients:
- 2-3 courgettes
- 3-4 tbsps olive oil
- 2 garlic cloves
- 2 salmon fillets
- 1tbsp lemon juice
- Salt & pepper
Method:
Courgettes:
- Remove the courgette flowers if there are any and slice the courgettes into pieces.
- In a saucepan add olive oil and heat up over medium heat.
- Add minced garlic and then add courgettes.
- Cook until ready and stir occasionally.
Salmon:
- Oil the Salmon and lemon juice, add salt and pepper.
- Place the salmon fillet on a sheet of foil and wrap the ends of the foil.
- Bake until the salmon is just cooked through, about 25 minutes in a preheated oven at 200C.
