Roast Chicken with Potatoes and Lemon
This lovely easy roast recipe is great for all the family. The Roast Chicken with Potatoes and lemon is a very popular dish in Greece, greek roasts are usually baked with everything together so that the potatoes absorb all the flavours.
Ingredients:
- 1 dissected chicken about 1.6kg
- 2 garlic gloves, minced
- 1 tsps oregano
- 800gr potatoes
- 4 tbsps olive oil
- juice of 1 small lemon
- salt & pepper
Method:
- Peel the potatoes and half them.
- Add the potatoes in a saucepan and cover with water.
- Bring to the boil and drain.
- In a large baking tray add the potatoes and chicken pieces.
- Season the chicken and potatoes with salt and pepper, drizzle the olive oil all over, add the lemon juice and sprinkle oregano.
- Use your hands to mix everything together.
- In a pre heated oven at 180C, roast the Chicken and potatoes.
- After 30 minutes carefully turn the chicken pieces over.
- Sprinkle over some more oregano if you like and return to the oven.
- Roast the Chicken and potatoes fo another hour or slightly longer.
- When ready the chicken and potatoes will have a brown golden colour.
- Serve with a crisp carrot and cabbage salad.
