Chicken with Greek Red Sauce
What about replacing the Sunday roast with this Chicken with Greek Red Sauce this Sunday? This recipe is very versatile and you can easily replace the vegetables to what you prefer, sometimes we like to make this recipe using chickpeas for a vegetarian version.
Ingredients:
- 1 kg chicken thighs
- 1 finely chopped onion
- 3 garlic cloves chopped finely
- 4 carrots
- 1 pack of mushrooms
- 1 chicken stock cube
- 1 cup of boiling water
- 1 can of chopped tomatoes
- 1 heaped tsp of ground cumin
- salt & pepper
- 4 tbsp olive oil
Method:
- Rinse the carrots and myshrooms and chop in smaller pieces.
- In a large saucepan fry the chicken thighs in the olive oil until browned.
2. Add the onion, garlic and ground cumin. Saute for a few minutes while stirring.
3. Then add the carrots and pour the water and stock cube. Season and bring to the boil for 10 minutes.
4. Turn the heat down, add the mushrooms and chopped tomatoes with a little sugar. Cover with the lid and cook for 30-40 mins, until the chicken and vegetables are tender.
5. Serve your Chicken in Greek Red Sauce with long grain rice or any other rice of your choice!
