Chicken & Vegetable Curry

This Chicken & Vegetable Curry is so yummy  and juicy. You can serve it with basmati rice but if you are adding potatoes in then you can have it as it is. View the video below:

Ingredients Serves 4:

  • 500gr chicken breasts
  • 1 large white onion
  • 2 cloves garlic
  • 3 carrots
  • 8 baby potatoes
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 courgettes
  • 500gr chopped tomatoes
  • 2 fresh chilli peppers
  • Chopped parsley for serving
  • 3 bay leaves
  • 1 tsp dried mint
  • 1 tsp ground cumin
  • 2 tbsp tomato ketchup
  • 1 tbsp curry powder
  • 3 tbsp olive oil
  • 2 vegetable stock cubes
  • Glass of water
  • salt & pepper

Method:

  1. In a large saucepan fry the chicken in olive oil in low heat for about 4 minutes.
  2. Add garlic, onions and fry for an extra 4 minutes,
  3. Chop carrots, courgettes, potatoes and peppers.
  4. Then add the vegetables and pour the water.
  5. Add chopped tomatoes, chilli pepper, mild Curry powder, cumin,  spearmint, a little ketchup ,bay leaves and vegetable stock cubes.
  6. Season and cook for 20 – 25 minutes in low heat.
  7. Serve your Chicken Vegetable Curry with long grain rice or any other rice of your choice .
