Easy Thai Red Chicken Curry


  • 1tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 2-3 tbsp Thai red curry paste
  • 3 chicken breasts, cut into pieces
  • 1 tin light coconut milk
  • 2 peppers
  • 1 red chilli, finely chopped



  1. Heat the oil in a saucepan and add the onions and garlic.
  2.  Cook over a medium heat, stirring occasionally, for a few minutes.
  3. Add the curry paste and cook, stirring for 1 minute.
  4.  Add the chicken and cook.
  5. Add the coconut milk and bring to the boil.
  6. Reduce the heat and simmer gently for about 20 minutes.
  7. Add the peppers and cook for an extra 5 minutes, or until tender.
  8. Serve your Easy Thai Red Chicken Curry with sticky rice.
