Easy Thai Red Chicken Curry
Ingredients:
- 1tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, chopped
- 2-3 tbsp Thai red curry paste
- 3 chicken breasts, cut into pieces
- 1 tin light coconut milk
- 2 peppers
- 1 red chilli, finely chopped
Method:
- Heat the oil in a saucepan and add the onions and garlic.
- Cook over a medium heat, stirring occasionally, for a few minutes.
- Add the curry paste and cook, stirring for 1 minute.
- Add the chicken and cook.
- Add the coconut milk and bring to the boil.
- Reduce the heat and simmer gently for about 20 minutes.
- Add the peppers and cook for an extra 5 minutes, or until tender.
- Serve your Easy Thai Red Chicken Curry with sticky rice.
