Vegetable Spring rolls
So easy peasy, so yummy and perfect for an appetizer or if you are expecting visitors. We prefer baking the spring rolls for a healthier and lighter version, you can always fry them if you like but be careful to use a small amount of the filling as overstuffed spring rolls can break apart.

Ingredients:
- 1 filo pastry
- ½ Chinese cabbage, finely sliced
- 3 carrots, peeled and finely chopped
- 3 courgettes finely chopped
- 1 onion finely chopped
- 50gr. Olive oil
- Salt and pepper
- 1 tbsp five spice powder
Method
- In a big frying pan or wok put the olive oil and the onion.
- Sauté the onion and add cabbage and salt.
- Add carrots and courgettes (don’t let courgettes melt).
- Remove from heat and add ½ tsp salt, pepper, five spice powder and let the filling cool.
- Open and cut lengthwise the pastry sheet.
- Brush each pastry sheet with olive oil and add 1-2 tbsps of the filling.
- Roll the pastry sheet and turn the sides inside.
- Bake in a preheated oven at 160c for 30 minutes.
- Serve with sweet and sour sauce.
