Valentine’s Strawberry Pies

Ingredients for the Pastry:

  • 2 ½ cups plain flour
  • 100gr of butter cut into cubes
  • 2tbsps sugar
  • ¾ tsp salt
  • ½ cup buttermilk
  • 1 egg and sugar for topping the pie

Ingredients for the Filling:

  • 5 cups of sliced strawberries
  • ½ granulated sugar
  • ⅓ brown sugar
  • Pinch of salt
  • 2 tbsps lemon juice
  • ¼ cup cornflour
  • ½ tsp vanilla extract

Method:

  1. In a bowl mix flour, sugar and salt and add the butter. Using your fingers break the butter down into the flour mixture until the butter pieces are the size of oats.
  2. Create a well and add the buttermilk and mix to bring the dough together.
  3. When the dough is ready wrap in clean film and refrigerate for 1 hour.
  4. For the strawberry filling, in a bowl toss the strawberries, sugars, salt, lemon juice, cornflour and vanilla extract. Allow to rest for a few minutes so the strawberries produce juice.
  5. Take the dough out and roll it as thick as you like. Then use a glass or cup and cut off circles for the bottom of the mini pies.
  6. Add the bottom on a baking tray and then add filling into it. Make sure not to add too much filling as it will spill over when baking.
  7. Once all bottom pastries are filled, take a glass again and cut off circles on the dough for the top of the pies. Take a heart cutter and cut small hearts in the middle of the circles.
  8. Then place on top of our mini pies and brush with egg and then sprinkle with sugar.
  9. Bake in a preheated oven to 180c for 30 minutes.
